The Perfect Stovetop Steak

Cook a steakhouse-worthy steak on your stovetop! With just a handful of ingredients and a single pan, you’ll be well on your way to serving up a steakhouse-worthy dinner. Chef Nettie Frank shared her foolproof method for stovetop steak perfection.

Butter is your secret weapon when pan-searing a steak. As it melts, it creates a rich, golden crust that locks in flavor. For added depth, season the steak with fresh thyme, rosemary, and garlic as it cooks. These simple aromatics take your steak from good to gourmet.

One crucial step most home cooks overlook is resting the steak after cooking. Chef Nettie emphasized the importance of this step, explaining that it allows the juices to be redistributed, enhancing the steak’s taste and texture.

 

The Perfect Stovetop Steak

Recipe by Chef Nettie Frank

INGREDIENTS

  • 2 NY steaks
  • 1/4 tsp kosher salt
  • 1/8 tsp black pepper
  • 1 T. olive oil
  • 4 sprigs fresh rosemary
  • 6 sprigs fresh thyme
  • 6 cloves garlic
  • 6 T. butter

INSTRUCTIONS

1. Using a sauté pan on medium to high heat, add olive oil. Once oil moves to the outer edge of the pan it is ready for the steaks. If the pan is smoking it is too hot and needs to cool down.

2. Season both sides of the steak with salt and pepper. Lay each steak into the hot pan. Sear one side for 3-4 minutes.

3. Flip steaks to the other side, do not shake or move the pan.

4. Add the garlic cloves and fresh herbs. Add butter in chunks all around the steak. Let them cook on this side for 3-4 minutes.

5. Using a large spoon, spoon the hot butter over the tops of the steaks.

6. Remove steaks from the pan and set aside with foil covering them for 5 minutes.

7. Slice up and serve
