Creative Easter Treats

This Easter, make treats that would make the Easter Bunny proud! There
are so many creative recipes you can make for brunch, dessert, or even
Easter baskets fillers!

Edible Flower Lollipops

Make your favorite hard candy (lollipop) recipe and flavor as desired. Tint
the candy using gel food color to create a very light pastel color. Pour
candy into round lollipop molds approximately ½ full. Press clean edible
flower into candy face down. Place stick in lollipop. Pour candy over
lollipop to fill mold and cover flower. Let set. Use edible flowers such as
pansies, violas, rose petals, etc. Make sure to use pesticide free flowers
and make sure all flowers are edible before using. Idea inspired from:

Strawberry Carrots

Choose strawberries with a green top that are wide at the top and tapered
that can resemble short stubby carrots. Wash and pat dry. Grasp by the
green top and dip strawberry into melted orange candy melts. Set onto
wax paper and let set. Drizzle melted orange candy melts over the dipped
berry.

Cotton Tail Cupcakes

Bake cupcakes and frost pink or white and sprinkle with coconut if desired.
Melt pink or white candy melts and using a pastry bag and a small round
piping tip, pipe long slender bunny ears onto wax paper. (If you do not
wish to freehand, draw a pattern for the bunny ears on a paper. Place wax
paper over the pattern and use pattern as a guide to pipe the ears.) Fill
center of ears with white or pink melted candy melts if desired. Let set and
insert ears into front edge of cupcake. Place a ball of cotton candy (or a
marshmallow) on the back edge of the cupcake to create a bunny tail.

Baby Duck Pretzel Snacks

Place regular mini pretzels onto wax paper. Melt yellow candy melts and
place in a pastry bag with a medium round piping tip (or use a zip lock bag
with the corner snipped) fill pretzel with the candy melts. Place a small
orange candy for beak and a tiny black candy for eye. Let set.

Jelly Bean Fudge

Mix together one bag of melted vanilla flavored chocolate chips and one
can of vanilla icing. Stir in about 1 ½ cups tiny jelly beans (adjust amount
to your liking – also can chop them in smaller pieces if desired). Pour into a
foil lined 8″ x 8″ pan. Sprinkle with additional jelly beans. Let set and cut
into squares.

Mini Bundt Nests

Bake chocolate mini Bundt cakes (Wilton pan available at Wal-Mart) and let
cool. Spread melted chocolate onto a piece of wax paper and let set until
hard. Gently roll up wax paper, breaking chocolate into large shards.
Drizzle chocolate icing over Bundt cakes. Place large chocolate shards on
top of icing and arrange to look like a nest. Let set. Place several candy
eggs in the “nest.”
