3 lb. Milk Chocolate Chips
2 cups Heavy Cream
1 oz. Unsalted Butter
Heat Chocolate chips in a double boiler until outside edge looks melted. In a pot, heat
heavy cream and butter to 160 degrees. Take Chocolate off heat, add cream and butter mix
until fully incorporated.
Chocolate Marshmallow mixture:
Grease a 13 x 9 sheet pan with cooking spray. Lay ¼ amount of Ganache on the base. Use
half a bag of mini marshmallows lay over Ganache, and then pour the rest of the Ganache
over the marshmallows. Using an offset spatula move the Ganache over the marshmallows
to coat. Put in fridge for 2 hours to set. Pull out of fridge, using a pizza cutter cut the
Chocolate into 3″ squares and place in freezer.
Graham Cracker Breading:
1/2 cup whole milk
Egg Wash: 9 eggs, 1/2 cup whole milk
Get 3 pans and place flour in the first, Egg wash in the second, Graham cracker crumbs in
Grab Chocolate Marshmallow mixture out of freezer. Place squares in flour, coat squares
and tap off the access flour. Place in the Egg wash and fully coat squares immediately place
in Graham crumbs and fully coat. Then place squares back in the egg wash and then back
in the Graham crumbs for two coats.
Place in freezer let set 1 hour. Then they are ready.
Heat deep fryer to 350 degrees. Cook smore until golden brown.
