What’s better than tortilla soup on a cold day?

This is a dinner idea you’ll definitely want to share. It’s loaded with hearty ingredients, packed with bold flavors, and ready in just five minutes. Recipe creator Amy Richardson shared her go-to recipe when she’s taking dinner to someone in need: her signature tortilla soup.
Amy’s Five Minute Tortilla Soup
INGREDIENTS
- 4 cups chicken broth
- 2 cans S&W Petite Cut Tomatoes, undrained
- 2 packages Fresh Success Salsa seasoning mix
- 2 cans S&W Chili Pinto Beans, in zesty sauce
- 2 16 ounce bags frozen petite white corn, yellow corn, or mixed
- Shredded rotisserie chicken, if desired
Suggested Toppings
- Cheese
- Tortilla chips
- Sour cream
- Fresh cilantro
- Limes
- Avocado slices
METHOD
- In a large sauce pan, add chicken stock, tomatoes, and salsa seasoning mix. Bring to a full boil.
- Add beans and shredded chicken if desired and bring to a simmer.
- Add frozen corn, stir. Bring to a light simmer. Remove from heat.
- Serve hot with suggested toppings.
Notes
A 24-ounce jar of prepared salsa can be substituted for the tomatoes and seasoning packets.
