1 unbaked single pie crust
1/2 cup butter, softened
1/2 cup granulated sugar
1/2 cup brown sugar
1 teaspoon vanilla
1/2 cup semisweet chocolate chips
1/2 cup raisins
1/2 cup pecans, chopped
1/2 cup flaked sweetened coconut
vanilla ice cream
Preheat oven to 350 F.
Line 9” pie plate with pastry, flute edges.
Beat together butter and sugars, add vanilla and eggs and beat. Stir in chocolate chips, raisins, nuts and coconut. Spread in prepared pie shell. Bake at 3500 F for 35-45 minutes or until set.
Serve warm (not hot) with a scoop of vanilla ice cream or top with whipped cream. Serves 8.
