Easy Chicken Tetrazzini


3 tablespoons margarine
1 medium onion, chopped
1 celery stalk, chopped
2 cups cooked chicken, cubed or cut into strips
6 oz. (1 1/2 cups) uncooked spaghetti
1 teaspoon salt
1/4 teaspoon pepper
1 can cream of chicken soup
2 1/2 cups chicken broth (or bouillon)
1 can sliced mushrooms
1/2 cup grated parmesan cheese

Melt margarine in a skillet. Add celery and onion and cook until vegetables are clear. Layer chicken over vegetables. Layer dry spaghetti over chicken. (Spaghetti can be broken into smaller pieces or most any type of pasta could be used.) Add salt, pepper, cream of chicken soup and chicken broth making sure spaghetti is covered and moistened. Layer on the mushrooms and parmesan cheese. Sprinkle paprika over top of all ingredients.

Cover and simmer for 20 minutes. Cook for several more minutes or until spaghetti or pasta is thoroughly cooked.
