Easy Focaccia Bread

Easy Focaccia Bread
3 c. flour
1 2/3 c. warm water
2 T. sugar
1 ½ t. salt
¼ t. yeast


In a medium bowl, mix all ingredients together until flour is just moistened. Cover tightly and let sit out at room temperature for 12 to 24 hours. To bake, resist the temptation to stir and just carefully pour out on to a greased cookie sheet. Drizzle about 2T. olive or other oil over the dough and spread dough with a rubber spatula to ¾ inch thickness. Let rise for 15-20 min. Add simple herbs like rosemary or sage, with coarse salt. For another look, add black or green olive slices or thin sliced tomatoes with course salt. Bake at 450° for 20 to 25 min.

Pepperoni can be degreased before putting it on the pizza. Lay the slices between two paper towels in the microwave for 30 seconds on high. Most of the grease will soak into the paper towels and not into the pizza.

Use a pizza stone in the oven to facilitate cooking the bottom of the pizza. Heat the oven to 450° with the stone in it. After the oven is preheated, place the pizza pan on top of the stone and the bottom of the pizza will brown nicely.

Make Focaccia bread into a dessert by spreading it with olive oil and then sprinkling cinnamon and sugar over the top. Bake at 450° for 20-25 min. Drizzle a thin powdered sugar frosting over the top and serve like cinnamon rolls.

Or—prepare the dough and drizzle honey over all. Sprinkle with chopped nuts and bake as above.

Easy Focaccia Pizza
½ c. pizza or marinara sauce
2-3 c. grated Mozzarella cheese
6 oz. pepperoni
Other toppings as desired


Prepare dough as described in Easy Focaccia Bread and after it is spread out on a cookie sheet or pizza pan, bake it for 10 min in 450° oven. Remove it from the oven and add sauce, meats and/or other toppings and cheese. Bake for another 10-15 min. until cheese is melted and browning. Serve warm.
Homemade Pizza Sauce
1 15 oz. can tomato sauce
1 6 oz. can tomato paste
1 T. Basil


Mix together and spread on any type of pizza. Left over sauce can be frozen for another time. Makes 1 ½ c. sauce.
