Fajitas


8 oz. flank steak
salt and pepper
1/2 yellow onion, chopped
2 6-inch flour tortillas
favorite salsa
fresh cilantro, chopped


Season the flank steak with salt and pepper to taste. Cook in a saute pan over medium-high heat for 3 minutes.

Turn steak, add the onions, and cook 3 more minutes or until steak is done.
Remove from the heat, and slice against the grain.

Place slices of flank steak in the center of each tortilla.
Add onions, salsa, and garnish with cilantro.
Fajita Salad
8 oz. flank steak
salt and pepper to taste
mixed greens
1 tomato, quartered
1/2 cup jicama, chopped


Season the flank steak with salt and pepper to taste.

Cook in a saute pan over medium-high heat 3 minutes on each side, or until done.
Remove from the heat and slice against the grain.
Set aside.

Toss the greens with dressing, and garnish with tomato and jicama.
Add slices of flank steak to the top of the salad.
Dressing:
4 oz. Italian dressing
4 oz. tomato juice
1/2 tsp. fresh garlic, minced
1 Tlb. frozen corn
1 tsp. fresh cilantro, chopped
