Fresh Corn and Shrimp Salad

2 large ears of fresh corn
2 tablespoons fresh cilantro, chopped fine
1 whole tomato, medium chopped
2 tablespoons red onion, chopped
2 – 4 tablespoons red pepper, thin sliced
juice of 1 lime
pinch of sea salt
pinch of dark chili powder
pinch of cumin
½ to ¾ pound of 26/30 shrimp, cooked, tail-off
2 – 4 tablespoons cucumber, chopped, seeds and skin removed
¼ cup V-8 juice

Bring a pot of water to a boil and cook corn for 60 seconds. Remove from heat place in ice water. Cool and remove corn from cob.

Combine all ingredients together and serve.
