Fresh Peach and Blueberry Granola Crisp

Filling
4 lbs. fresh peaches (about 8), sliced
2 cups fresh blueberries
1/4 cup sugar
2 T. flour
juice and zest of 1 orange
1 tsp. vanilla extract


In a bowl, combine the peaches, blueberries, sugar, flour, orange juice and orange zest, and the vanilla extract. Place in a 2″ deep baking 9″ x 9″ baking pan.
Topping
1 cup granola
1 cup flour
1 cup oatmeal
1/2 cup brown sugar
1 tsp. cinnamon
1/2 tsp. ground nutmeg
1 cup chopped walnuts
1/2 stick butter, cut into small pieces


In another bowl, combine the topping ingredients, cutting in the butter with a pastry cutter or 2 forks. Pour over the peach mixture. Bake in preheated 375o oven fro 35-40 minutes or until bubbly and peaches are soft. Cool to room temperature. Serve with vanilla ice cream or whipped cream. Serves 8.
