Fresh Raspberry Key Lime Trifle
2 pints Raspberries or Strawberries
1 cup vanilla yogurt
2 tbsp fresh key lime juice
6 tbsp powdered sugar, divided in half
1 cup heavy whipping cream
½ tsp vanilla extract
3-4 cups angel food cake, cut into 1″ cubes
Whisk together yogurt, key lime juice, and 3 tablespoons of the powdered sugar, and set aside.
Whip cream with the remaining powdered sugar until stiff peaks form.
Carefully fold the key lime and yogurt mixture into the cream.
Divide cubed cake between 4 dessert goblets; then spoon key lime mixture over the cake.
Arrange berries on top and garnish with a sprig of mint if desired.
