Fresh Strawberry Jam and Lemonade

Suzy Fackrell shares two recipes that are bursting with strawberry flavor.
Low Sugar Strawberry Freezer Jam
1 ½ c. sugar
½ c. Ultra Gel
4 c. crushed or pureed strawberries
2 T. lemon juice or ¼ tsp. Citric Acid powder

1. Wash jars in dishwasher to thoroughly clean & sanitize.
2. Combined sugar and Ultra Gel in a small bowl and whisk together to get out the lumps.
3. Add the crushed berries, lemon juice (or citric acid) in a medium bowl. Whisk until well blended.
4. Gradually add Ultra Gel, stirring constantly for about 1-2 minutes or until sugar dissolves.
5. Let stand five minutes to thicken and stir until smooth.
6. Package, label, and date freezer jars. Place in freezer.
The jam should be good for 6-12 months in the freezer. Once opened, try to use within a month.

Frozen Strawberry Lemonade
2 c. water
½ lemon or lime, peel on (only if using high powered blender. Remove peel if not)
20 drops liquid Stevia, regular or lemon flavored
2 T. lemon or lime flavored fish oil swirls (Barlean’s brand), optional
2 c. of frozen strawberries (approximately-use more if a thicker slush is desired)
2-4 T. of sugar (if needed)


Blend the first 4 ingredients for about 30 seconds or until the lemon/lime peel is totally pulverized. If you don’t have a high powered blender, then remove the peel. This should take about 30 seconds to 1 minute.



Add the frozen strawberries and blend until there are no more chunks. If needed, add 2-4 T. of sugar to sweeten.
