Fresh Tomato & Basil Tart


1 sheet frozen puff pastry, thawed
2 T. olive oil mixed with 1 clove minced garlic
12 Roma tomatoes, cut in thin slices
1/4 C. grated Romano cheese
1/4 C. basil leaves, cut into thin strips


1. Preheat oven to 450 degrees.


2. Roll out pastry. Place on parchment paper on baking sheet. Brush with
olive oil-garlic mixture. Place tomatoes on pastry. Brush with remaining oil
and sprinkle with cheese.

3. Bake for 15 minutes until golden brown. Remove from oven and cool 5
minutes. Sprinkle with basil then cut into 2″ x 2″ pieces and serve as an
appetizer.
