Fried Calamari-Caesar Salad


6 ounces lean calamari or squid, tentacles left intact
and the tubes sliced ½ inch thick
1 cup all purpose flour, seasoned to taste
1 cup milk
4 cups canola oil
4 cups romaine hearts, diced
½ cup fresh croutons
2 tablespoons fresh Parmesan, grated
¼ cup of your favor Caesar dressing


Place the canola oil in a deep fryer and bring to 350 degrees.

Dip the calamari (or squid) into the milk and drain off. Then dip into the seasoned flour and fry until golden brown, approximately 3-4 minutes.
Set aside for one minute.

In a large salad bowl, toss the romaine hearts and croutons with the Caesar dressing and Parmesan cheese. Spoon onto serving plates and top with the calamari (or squid) and serve with a fresh lemon wedge.
