Fried Pickles With Vegetables and House Dressings

Fried Pickle Batter
2 cups pancake mix
1 cup. Flour
1 Tbsp. Baking Powder
1 Tbsp. dry dill
1 Tbsp. garlic salt
1 Tbsp. old bay seasoning
2 cups. whole milk
2 cups. Pickle juice
1 Tbsp. Kosher Salt
1 Tbsp. Black ground Pepper

May need to add more liquid if necessary or more flour to get correct consistency.


Combine all dry ingredients and mix well. Add the milk and the Pickle juice slowly while stirring. The batter should be loose not to thick. Once you have the batter made take a pickle wedge and dredge it in flour then dip it in the batter making sure it is well covered with batter and drop it in 350 degree frying oil. Wait 30 seconds and then loosen pickle to make sure it floats in the oil. Fry until pickle is golden brown. Serve the fried pickles with Ranch and Thousand Island dressings accompanied with carrots, celery and jicama sticks.

Note: We use only Kosher Dill Pickle Spears (quartered pickles) they are the Best!!!!!
