This piping method gives your cake a pretty, frilly look.
Pull out your piping bags! This delicate decorating style is something you can do at home. It’s made of intricate garlands, frilly details, and lots and lots of frosting (there’s no such thing as too much frosting)!
Baker Meriel Frandsen introduced us to the Lambeth piping method. It’s an easy enough technique that even a beginner baker can pick up. You’ve probably seen it done on fancy wedding cakes or behind the bakery glass. Using the frosting, you create intricate depth using layer upon layer of frosting.
“It’s over-frosting. It’s over the top,” Meriel described. “It’s ruffles, on ruffles, on ruffles!”
Meriel said this technique is best applied in one direction around the cake. Practice on a cutting board first to get the hang of it, and then try your hand at a real cake!
“It’s surprisingly forgiving as well,” she added. “I think it’s because the ruffles hide all of those mistakes.”
