1/2 gallon chocolate ice cream (in rectangular carton)
1 jar (7 oz.) marshmallow cream
1 jar (18 oz.) fudge ice cream topping (not syrup)
2 packages (about 1 pound) graham crackers
Break graham crackers in half to make squares. Spread one square with fudge topping. Spread the other half with marshmallow cream. Remove carton from sides and ends of ice cream. Slice rectangular ice cream crosswise into 12 slices, about 1/2 inch thick. Cut each slice in half. Trim approximately one inch off each ice cream slice to create a square of ice cream about the same size as each graham cracker square (set aside trimmed ice cream for a treat). Place a square of ice cream between chocolate and marshmallow spread crackers to form a sandwich. Enjoy now or wrap each sandwich in wax paper, or foil, or place in a small sandwich bag and freeze for later enjoyment.
Peanut Butter Fudgesicles
1 small package chocolate pudding mix (cook variety)
1/3 cup sugar
1/4 cup unsweetened cocoa
2 cups milk
1/4 cup creamy peanut butter
5 oz. paper cups
Popsicle sticks
Combine pudding mix, sugar, cocoa, and milk in a quart microwave save bowl. Stir to mix. Microwave on high heat 5-7 minutes, stirring every 1 1/2 to 2 minutes, until bubbly. Stir in peanut butter. Cool. Spoon into paper cups. Place a Popsicle in each cup and freeze. When ready to enjoy, tear paper cup away from fudgesicle and lick away.
