Fruit Bars


1 pkg. 10oz. Frozen strawberries or raspberries partially thawed, add juice also. (If using fresh berries, allow about 1-1/2 cups)
1 can 11 oz. Mandarin oranges (un-drained)
2-3/4 cups flour
1-1/2 cups granulated sugar
2 eggs
1 teaspoon vanilla
1-1/2 teaspoon soda
1/2 teaspoon salt
3/4 cup walnuts or pecans, chopped
1-1/2 cups coconut


1.) Mix berries and oranges in medium size bowl or measure.

2.) Using mixer and mixing bowl, blend flour, sugar, eggs, vanilla, soda and salt. Add fruit and juice and mix at low speed for about 2 minutes.

3.) Stir in chopped nuts. Pour batter into greased and floured (or use Baker’s Joy) jelly roll pan (11″ x 15″). Sprinkle coconut over top.

4.) Bake at 350 degrees for 30-40 minutes (until center tests done with toothpick). Remove bars from oven and while they are still warm, pour glaze over top making sure to cover all of it. Cool completely then cut into bars.
Glaze:
3/4 cup sugar
1/4 cup milk
1/2 teaspoon vanilla
1/2 cup margarine


In small saucepan (or microwave measure) mix:


Bring to a boil and boil for 2 minutes. While hot pour over warm fruit bars.
