Fruit Salad


Fruit of choice (1 cup or 1 whole fruit per person) *
Variety of cheese (2-4 ounces per person) **
4 ounces ricotta cheese
2 tablespoons honey or corn syrup
1 orange
fresh mint
crusty bread or crackers, optional


Prepare cheese by cutting into various bite-size shapes, arrange on serving tray.

Prepare dressing by combining ricotta cheese, honey, zest from 1/2 orange, and juice from one orange in a blender. Blend on high until smooth. Set aside.

Use one of the following methods for preparing salad.
1. Cut fruit into bite size pieces and toss with dressing. Serve with crackers and cheese.
2. Arrange whole fruit or thin slices of fruit on serving tray. Place dressing in a small dish in center of fruit and use as a dip. Serve with crackers and cheese.

Garnish salad with sprigs of fresh mint and serve with cheese and optional crusty bread or crackers.

* Fruit suggestions: apple, pear, peach, red grapes, kiwis, strawberries, pineapple, or other fruit of choice

** Cheese suggestions: smoked gouda, camembert, mild or sharp cheddar, brie, swiss, blue, or other cheese of choice
