Grandma’s Filled Cookies
1 c. sugar
2 eggs
¾ c. butter
1/4 c. milk
3 tsp. Baking powder
Flour, enough to make a soft dough that can be easily rolled Pinch salt ½ tsp vanilla grated nutmeg Beat together sugar, eggs, butter and milk until fluffy. Sift dry ingredients together and add to sugar mixture, mix well, then stir in vanilla and nutmeg. Roll out on floured board to ¼ inch thick. Cut with large round cookie cutter and fill with choice of fillings.
Crimp and seal edges and then bake at 375 for 10-12 minutes.
Angel Hair Filling Spanish version
1 c. cooked spaghetti squash
¼ c. water
¾ c. sugar
1 tsp. Flour
Microwave squash, cut in half, remove seeds and scoop out pulp.
Combine ingredients and stir over med. heat until thick and clear.
Use
1-2 Tb. filling for each cookie.
Traditional Raisin Filling
1 c. raisins
1/3 c. sugar
½ c. water
1 tsp. Flour
Combine all ingredients and cook until thick. Fill cookies as full as desired, about 1-2 Tb. each.
