Green Eggs and Ham

In honor of Dr. Seuss’ birthday this month, have a fun celebration at home!



Lindsey Joy Smith shares her grown up version of Green Eggs and Ham.

Green Eggs and Ham
1 Baguette, sliced, brushed with olive oil, and toasted
Bacon, fried in strips
Pesto (recipe to follow)
Quail eggs, fried sunny side up


To assemble: spread pesto on baguette slice. Top pesto with bacon, and then gently place the sunny side egg on top. Serve to your loved ones whilst reading Green Eggs and Ham by Dr. Seuss. Let’s all thank that Sam-I-Am.
Place basil, garlic and pine nuts in a food processor. Slowly pour in oil while processing. Blend until smooth and creamy. Add salt and pepper to taste. Stir in cheese. Serve over any pasta, with any bread, to anyone that you want as a friend.

Pesto
2 c fresh basil, packed tightly
2 cloves of garlic
¼ c pine nuts
2/3 c amazing extra virgin olive oil, divided
kosher salt and fresh ground pepper (to taste)
½ c shredded favorite hard cheese (I like parmegiana)
