Green Eggs & Ham


8 hard-boiled eggs (more or less – depending on what you have)
4 tablespoons butter
4 tablespoons flour
1/2 teaspoon dry mustard
3 cups milk
1/2 teaspoon salt, or to taste
1/4 teaspoon pepper
1 cup grated cheese
1 1/2 cup cooked diced ham
6 slices buttered toast or English muffins

Peel eggs and remove yolks. Set yolks aside. Dice whites and color as directed below. (If a more “normal” colored egg is desired eliminate the green step and continue with recipe.)

Melt butter in saucepan. Stir in flour, salt, and dry mustard. Stirring constantly, cook 1 minute over medium heat. Remove from heat, gradually stir in milk. Return to heat and continue to cook until hot and bubbly. Remove from heat, add cheese and stir until cheese melts.

Add egg whites and ham to cheese sauce. Stir to coat eggs and ham. Spoon mixture on toasted, buttered bread or English muffins. Place egg yolk in a wire strainer or sieve and rub yolk through the wire, sprinkling the yolk on the dish. Serve with fresh fruit and a cold glass of milk.
