1 pound beef tenderloin trimmed of any fat (2 small steaks) seasoned both sides with red pepper, chili powder, garlic powder, salt and fresh pepper
4 cups chopped Romaine lettuce
4 cups spring salad mix
½ cup thinly sliced red onion
1 cup thinly sliced red or orange bell pepper
¼ cup crumbled blue cheese
1 recipe Spicy Candied Almonds
1 large mango, peeled, seeded and chopped coarsely
1/3 cup seasoned rice vinegar
¼ cup fresh lime juice
3 tablespoons brown sugar
¼ teaspoon Chinese or Thai Chili Sauce
1 tablespoon almond oil
2 green onions finely minced green onion
1 clove garlic, pressed or minced
½ tablespoon minced ginger
¼ teaspoon salt and fresh ground black pepper to taste
1. Whisk vinegar together with all remaining ingredients and mix together well. Add chopped mangos to dressing and set aside.
2. Lightly spray grill rack with cooking spray. Prepare grill, i.e. light barbecue or cools and heat to medium-high to high heat. Grill steaks for 5-6 minutes per side, until medium rare. Remove meat from grill, cover and let stand 10 minutes Using a very sharp knife cut meat on the diagonal across the grain into thin slices.
3. In large salad bowl toss lettuce together with onion and bell peppers until combined. Divide salad between four plates top each with steak followed by Mango Almond dressing, blue cheese and candied almonds then serve. Or, serve family style toping salad with meat, followed by cheese and nuts, allowing each person to add dressing to their salad individually.

Spicy Candied Almonds
¼ cup chopped almonds
2 tablespoons brown sugar
1/8 teaspoon chili powder or to taste
1 tablespoon egg white
To make almonds preheat oven to 350 degrees. Spray baking sheet with non stick cooking spray. Put nuts in small bowl and toss together with sugar, chili powder, egg white and salt. Place nut mixture on baking sheet and bake for 5 minutes or until nuts are lightly browned and sugar coated. Remove from oven and cool completely braking nut clusters into smaller pieces and set aside.
