Grilled Fruit Three Easy Ways

Skewered fruit on the grill
Plums, peaches and apricots, halved and pitted
Strawberries hulled and left whole


Soak wooden skewers in water for 30 minutes. Skewer fruit so open half of fruit sits on the grill. Clean grill of all meat particles and heat on high. Grill fruit for only 2 or 3 minutes. Remove from heat and serve plain or with ice-cream, or with one of the sauces below.
Strawberries and Bananas on a grill pan
Hull and halve strawberries
Peel and cut into long thick sections bananas

Toss strawberries and bananas in granulated sugar to coat


Heat grill pan on high. When pan is very hot, place fruit cut side down on the grill. As the sugar begins to brown turn and lightly brown other side. Remove to serving dish and serve with one of the sauces below.
Tin Foil Wrapped Fruit on the grill or placed on charcoal
Gingersnap, iced oatmeal, or vanilla wafer type cookies
Plums and apricots pitted and cut to a 1 inch dice


Per Pouch add:


1 tsp lemon juice
1 Tbl sugar
½ tsp cinnamon
1-2 Tbl butter
1 Tbl brandy, optional


Crumble cookie in a large piece of tin foil. Top with desired fruit. Add lemon juice, sugar, cinnamon, butter and brandy. Seal foil and place on hot grill or set on charcoal. Cook for 10 minutes. Serve with ice-cream or one of the sauces below.
Blueberry Simple Syrup
½ cup sugar
¼ cup water
Juice of one lemon
2 Tbl minced mint
1/3 cup blueberries


Heat sugar and water in a saucepan until sugar is dissolved. Add remaining ingredients.

Yogurt Sauce
1 cup greek yogurt
2 Tbl honey
1 Tbl mint


OR

1 cup plain yogurt
Squeeze of lime
1 Tbl honey.


Combine all ingredients.
