Grilled Hoisin Pork and Rice Noodle Salad


1 recipe Grilled Hoisen Marinated Grilled Pork, thinly sliced
1/3-cup seasoned rice vinegar
1/3-cup packed brown sugar
1/3-cup fresh lime juice
3 tablespoons Thai fish sauce
1 – 2 teaspoons chili paste
1 clove fresh pressed garlic
1 teaspoon dark Oriental sesame oil
8 ounces rice stick noodles, uncooked
3 cups mixed salad greens
1 cup seeded and chopped cucumber
1 cups julienne cut carrots
6 green onions, thinly sliced
½ cup fresh chopped mint
½ cup fresh chopped basil
½ red or yellow bell pepper, thinly sliced – optional
½ cup fresh chopped cilantro or coriander leaves – optional
¼ cup finely chopped dry roasted peanuts

Combine rice vinegar with sugar and lime juice and stir until sugar dissolves. Add lime juice, fish sauce, chili paste, garlic and sesame oil to sugar water and stir until combined. Set aside to cool.

Soak rice noodles in warm water for 10 minutes then cook in boiling water for 2 – 3 minutes until al dente, rinse in cold water, drain well, cut into 2 -inch to 4 -inch pieces and set aside.

Toss salad greens together gently with noodles, cucumber, carrot, mint, basil and pork together in large bowl. Add dressing to salad and toss all ingredients together gently. Sprinkle with chopped peanuts and serve.

Hoisin Marinated Grilled Pork

  • 1 lb. pork tenderloin, trimmed of any visible fat
  • ¼ cup low sodium soy sauce
  • ¼ cup hoisin sauce
  • ¼ cup brown sugar
  • ½ teaspoon crushed red pepper flakes
  • 2 cloves fresh pressed garlic
  • aluminum foil

    Combine soy sauce, hoisin, brown sugar, pepper flakes and garlic in a large zip lock bag. Trim all possible fat from pork and put in zip lock bag, seal and marinate in refrigerator 8 hours or over night.

    Remove pork from bag and discard marinade. Place pork tenderloin on a sheet of aluminum foil. Wrap tightly and cook package on grill or in 325º F. oven for approximately 20 minutes or until a meat thermometer inserted in pork reads 150º. Lightly spray grill with cooking spray. Remove meat from foil grill a few 2- 3 minutes on each side until done or until thermometer reads 160º for pork.

    Remove pork from grill, cool and slice thinly.
