Grilling Flavors for Fruits and Veggies
Pineapple slices

Cantaloupe

Honeydew melon

Peach halves

Apple slices

Pear halves

Grill fruit for 3 minutes per side on medium high grill.
Basic Rub
1 cup brown sugar

· 1/4 cup dry mustard

· 1 tablespoon smoked paprika

· 1 tablespoon garlic powder

· 1 tablespoon onion powder

· 1 tablespoon each salt and pepper

Combine all ingredients; stir to mix through.
Balsamic Syrup with Grilled Fruit
½ cup balsamic vinegar

¼ cup sugar

1 Tbl oil

1 Tbl fresh minced mint

Combine all ingredients in large Ziploc bag. Place pineapple and peaches in vinegar mixture. Let marinate for 5-10 minutes. Grill for aprox 2 minutes on each side. Serve with additional syrup and ice-cream if desired.

This is especially delicious with pineapple slices and peach halves.
Crystalized Ginger Coated Fruit Kebobs
Strawberries

Pineapple

Bananas

Mangoes

Peaches

2 Tbl vegetable oil

2 Tbl brown sugar

2 Tbl lime juice

1 tsp cinnamon

1/3 cup crystallized ginger, finely chopped

Prepare fruits by cutting them all into pieces that are aprox the same size (match the size of the strawberries). Thread onto metal skewers.

In a small bowl combine the oil, brown sugar, lime juice, cinnamon and giner. Brush the oil mixture lightly over fruit.

Grill 2-3 minutes per side over medium heat.
BBQ Saucy Grilled Pineapple and Portobello Mushrooms
½ cup bbq sauce

Dash liquid smoke

Dash Tabasco, optional

Pineapple slices

Portobello mushrooms

Combine all ingredients and spread over pineapple slices and Portobello mushrooms.

Grill for 4-5 minutes per side over medium heat.
Zippy Grilled Corn
8 ears corn on the cob, pull husks down and remove silk; leaving husks intact

2-3 Tbl Vegetable oil

2 tsp Cayenne pepper

4 tsp Chili powder

2 tsp Cumin

2 tsp Salt

Lime wedges for serving

Pull husks back from cobs (cleaning away all silk) and rub with oil. Combine seasonings in a small bowl and sprinkle over cobs. Place cobs (with husks pulled away from cobs) on grill and cook over medium heat 10 minutes, turning half way through. Fold husks back over cobs, move to indirect heat and cook a few more minutes. Serve with lime wedges.
Candied Corn on the Cob
6 ears of corn, husks and silk removed

2 Tbl vegetable oil

1/3 cup brown sugar

1 cup of butter, melted

Cayenne and salt for serving

Lightly rub corn cobs with oil to coat. Place on grill over medium heat. Cook 8-10 minutes, turning occasionally. Combine brown sugar and melted butter. Brush corn with the butter mixture and continue to grill corn 4-5 minutes longer. You can brush the butter mixture on the corn several times as desired while cooking. Serve with cayenne and/or salt at the table.
Grilled Asian Inspired Eggplant and Pears
2 Tbl sesame oil

2 Tbl soy sauce

2 tsp minced garlic

1 tsp minced gingerroot

1 Tbl brown sugar

2 Tbl vegetable oil

1 eggplant, cut into ¼-1/2 inch slices

Or

6 pears, halved

Combine all ingredients and brush over eggplant or pears. Place each on grill over medium heat. Cook eggplant 12-15 minutes. Grill pears 6-8 minutes; turning both during cooking process. Both are delicious alone, in salads or on a sandwich.
