Nothing says comfort food like a gooey grilled cheese and warm tomato soup.
Lindsey Joy Smith shares her grown-up grilled cheese recipe.
Creamy Tomato Soup
1 Tbs Olive Oil
1 small onion, chopped
2 medium carrots, shredded
4 cloves of garlic, minced
1 tsp sugar
1 tsp salt
¼ tsp pepper
¼ tsp red pepper flakes
1 T Italian Seasoning
28 oz. crushed tomatoes
1 ½ c chicken broth
2/3 c sliced sundried tomatoes in oil
4 oz cream cheese
Saute onions and carrots in a large pot till soft, 3-4 min. Add the garlic and stir for 15 seconds. Add the spices, sugar, crushed tomatoes, broth and sundried tomatoes. Let simmer for 20 min. Add the cream cheese and blitz with a hand held blender. Serve with fabulous grilled cheese sandwiches.
Grown-up Grilled Cheese
8 slices of high quality, delicious bread
1 c soft cheese like brie, or cream cheese
1 c cheddar cheese
1 c parmesan cheese
mayo
Combine the cheeses into a tasty paste. Divide the cheese paste and spread on four slices of the bread. Top the cheese with the other slices of bread. Spread mayo on the outside of the bread and grill in a medium hot pan. Whilst the first side is grilling, spread mayo on the top of the sandwich. Flip once the bottom slice is golden brown and grill the other side. Slice on the diagonal and serve with amazing delicious creamy tomato soup.
To spice up your life, and your sandwich, add some tasty ingredients to your mayo before spreading on your bread: roasted garlic, pesto, spicy brown mustard. It will take incredibly good grilled cheese, to out of the galaxy grilled cheese.
