2 – six ounce halibut filets, boneless & skinless
2 ounces crab meat
½ cup heavy cream
2 tablespoons Parmesan cheese
1 tablespoon fresh parsley, chopped
2 tablespoons onions, chopped
1 tablespoon vegetable oil
2 slices Monterey Jack cheese
In a heavy sauce pan, over medium heat, add oil and heat for 30 seconds. Add onions and cook for two minutes. Add parsley and cook for additional 30 seconds. Set aside.
Preheat oven to 325 degrees. In a small baking dish, pour ½ of the oil/onion/parsley mixture. Add the halibut and top with the remainder of the onion mixture. Pour cream over the top and bake for 12 minutes. Top with Jack cheese slices, Parmesan and crab and bake until golden brown, approximately 7 to 8 additional minutes. Serve piping hot.
