These Carrot Cake Pancakes Give You a Serving of Veggies Before Noon

Carrot Cake Pancakes

INGREDIENTS

  • 1 ¼ cups white whole wheat flour
  • 1 Tablespoon brown sugar
  • 1 Tablespoon baking powder
  • ½ teaspoon cinnamon
  • ¼ teaspoon ground cinnamon
  • 1 cup almond milk
  • 2 Tablespoons ghee butter
  • 1 teaspoon vanilla
  • 1 cup shredded carrots
  • ¼ cup pecans, chopped

TOPPINGS

  • ½ cup nonfat Greek yogurt
  • 4-5 drops stevia
  • Dash of vanilla
  • Raisins (optional)

METHOD

  1. In a large mixing bowl, blend together the first 5 ingredients. Add in milk, ghee, and vanilla.
  2. Add in carrots and pecans.
  3. Drop 1/3 cup batter on a greased, heated pan. Cook for 3-4 minutes on each side. Flip.
  4. Mix together the topping ingredients and top the pancakes with a dollop. Enjoy.
