Herb Potato Cake with Apple Turkey Gravy

Potato Cake Ingredients:
1 tablespoon rosemary, chopped
1 cup mashed potatoes, cold
2 tablespoons Parmesan cheese
1 tablespoon fresh basil, shredded
1 tablespoon green onions, chopped
1 tablespoon parsley, chopped
2 tablespoons vegetable oil

Mix all of the above ingredients and form into two patties. In a sauté pan over medium high heat, add the oil and bring to temperature. Sauté patties for 3 to 4 minutes.

Apple Turkey Gravy


  • 1 green apple, peeled and chopped
  • ½ tablespoon garlic, chopped
  • ¼ cup white wine
  • 1 tablespoon butter
  • ½ cup turkey gravy
  • 1 tablespoon parsley, chopped
  • 1 to 1 ½ cups re-heated turkey meat


    Over medium heat, melt butter and sauté apples and garlic for three minutes. Add white wine and cook for one additional minute. Add parsley and turkey gravy and cook for another minute. Thin with water, if needed. Place herb cake on a plate, top with turkey and coat with apple gravy.
