Home Cooked Fajitas

A sizzling plate of Mexican fajitas is the eat-with-your-hands experience that makes dinner casual and comfortable.



Stacy Springer shares how to make perfect fajitas at home.
Stove Top Fajitas
1 ½ lbs Flank or Skirt Steak
Rub:
1/4tsp Cayenne
1/2tsp Salt
1tsp Paprika
2Tablespoon Chili Powder


2 Tablespoon Cumin
4 Tbsp Lime Juice
1 Tsp. liquid Smoke
2T Vegetable Oil
1 Med Yellow Onion, sliced
2 Bell Peppers, sliced
Toppings:
8-12 Large Flour or Corn Tortillas
2 C. Salsa
1c. Grated Mexican Blend cheddar Cheese
1 C. Sour Cream

1) Combine Spice Rub and season both sides of steak.



2) Heat oil in large skillet over medium/high heat. Add in Flank Steak and drizzle ½ lime juice and liquid smoke over steak. Brown 4- 5 minute each side.



3) In separate skillet add oil to medium high heat and add onion and peppers until softened and reduce to medium heat. Season with Salt and Pepper as you go.



4) Remove Steak and drizzle the remaining lime juice over meat and let rest for 5 minutes.



5) Slice steak against the grain.



6) Heat tortillas and fill with sliced steak and onion/peppers.



7) Top with cheese, salsa and sour cream.



8) Enjoy!
