Homemade Spudnuts

Spudnuts
4 packets active dry yeast
½ cup warm water
11/2 cup milk
½ cup shortening
½ cup sugar
½ cup mashed potatoes (instant work great)
½ teaspoon salt
1 teaspoon nutmeg
2 eggs
5-6 cups flour


Add yeast to ½ cup warm water, set aside. Cut shortening into 5 cups of flour. Mix all other ingredients into flour mixture. Add yeast to mixture. Add additional flour to make very soft dough, stiff enough to roll, but not as stiff as bread. Let rest about 15 minutes. Roll out ¼ inch thick. Cut out donuts and let rise to almost double in size (approx 45 minutes). Any leftover dough may be re-rolled and cut, after allowing it to rest first. Fry in hot vegetable oil, about 1-11/2 minutes on each side. Drain on paper towels. Glaze while donuts are still warm. Yield: approx 3-4 dozen.
