Homemade Stir Fried Rice

Homemade Stir Fried Rice
1 Tbs oyster sauce
2 tablespoons soy sauce
1 tsp Chinese 5 spice
1 Tbs butter
3 large eggs, beaten
2 tablespoons vegetable oil (or more, if needed)
1 cup frozen (but thawed) peas
2 or 3 scallions, sliced (mostly white bits)
1 large carrot, sliced very thinly
2 cups day old cooked long grain rice
2 cups diced ham

1) Combine the oyster sauce, soy sauce, and five spice in a small bowl. Set aside for later.



2) Heat your wok, or large skillet to medium high heat. Add the butter and once it starts to foam, add the egg. Cook it like you would an omelet, in one large egg pancake. Flip and cook the other side and remove from pan onto a plate until cool to handle. Chop egg and set aside for later.



3) Return wok to medium high heat and add the oil until it shimmers. Add the peas, scallions, and carrots. Cook for a minute or two.



4) Add the cold rice, ham and sauces to the wok and fry. Be patient! Let it get golden and fabulous!



5) Serve immediately!
