Homemade Tortillas


2 cups flour
1 tsp. salt
1/2 tsp. baking powder, (optional)
1/4 cup lard, or shortening


Combine flour, salt, and baking powder (if used, it will prevent the dough from stretching and making large tortillas). Work lard or shortening into flour mixture. Add about 1/2 to 1 cup warm water to make a soft dough. Knead until dough is soft and springy. Divide into 8-10 equal balls and “lightly” coat with lard. Cover and allow to rest for 15 to 30 min. Heat ungreased griddle. Roll each ball of dough into a 8 inch circle on a lightly floured surface (or, if you are practiced, had pat). Bake on griddle until flecked with brown. Turn and brown opposite side. If tortilla puffs during cooking use a pad (clean towel, paper towel, etc) to press down. Cover tortilla with dry clean dish towel to keep warm.
