Honey Spice Barbecue Ribs


2 raw racks of baby back ribs
1/2 cup diced onion
1/2 cup diced celery
1/2 cup diced carrots
2 cups water
salt and pepper to taste


Preheat oven to 325 degrees. Rub ribs with salt and pepper and place ribs and vegetables in a heavy baking pan. Cover with water and cook, uncovered, for 30 to 35 minutes. Set ribs aside. Remove liquid and boil until volume is decreased by half. Set aside.

Sauce

  • 1/2 cup tomatoes, diced
  • 1 cup of your favorite barbecue sauce
  • 2 tablespoons honey
  • 1/2 teaspoon hot sauce
  • 2 tablespoons garlic, crushed
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon smoke flavor
  • 1/2 teaspoon celery salt

    Method:

    Combine sauce ingredients, add to rib liquid. Cook over medium heat for 30 minutes.

    Take ribs and cut between bones 75% of the way through. Cover with ½ of the sauce and finish on your barbecue grill for three minutes per side. Continue to baste ribs with remaining sauce while finishing on the grill.
    Serves 4.
