Hot Turkey Salad Supreme
2 cups diced cooked turkey
2 cups chopped celery
½ teaspoon salt
2 tablespoons minced onion
2 tablespoons lemon juice
1 cup mayonnaise
¾ cups grated cheddar cheese
1 cup crushed potato chips
½ cup slivered almonds
For Serving: leaf of lettuce, lemon wedges, and parsley sprigs
Preheat oven to 350 degrees. Mix turkey, celery, salt, onion, and lemon juice in a medium bowl. Fold in mayonnaise and spoon into a greased casserole dish. Sprinkle grated cheese on top, followed by crushed potato chips and slivered almonds. Bake for 15 minutes. Don’t over bake; mayonnaise will break down. Serve on lettuce leaves and garnish with lemon wedges and parsley. Makes 6 to 8 servings.
