Irish Soda Bread


2 C. flour
2 T. sugar
1 1/2 tsp. baking powder
1/2. tsp baking soda
1/2 tsp. salt
2 T. butter
7/8 C. buttermilk
1/2 C. currants


1. In a bowl, combine the flour, sugar, baking powder, baking soda, and salt.
Cut the butter into the flour mixture with a pastry blender or 2 knives. Add
the buttermilk and mix thoroughly into a soft dough. Add the currants.

2. Knead the dough on a slightly floured board about 3 minutes or until
smooth. Form the dough into a 7 inch flat round and place in a lightly oiled
cake pan.

3. Cut a cross about 1/2 inch deep in the center of the round. Bake in a 375
degree oven for 35-40 minutes or until golden brown. Cool on a wire rack.
