Jamaican Papaya Salad

Jamaican Papaya Salad
1 head romaine lettuce, bite-sized pieces
1 papaya, thin wedges
1 cucumber, 2″ long thin strips
1 avocado, thin strips
1 large tomato, thin wedges
1 cup sugar snap peas (option: blanch for 1 min, then refridgerate)


Options for serving:

Spread lettuce over large oval platter. Assemble remaining ingredients in circular pattern on top of lettuce. OR create individual servings by mounding fruit over lettuce and drizzling with dressing.

Dressing
1/4 cup white wine vinegar
3T honey
1 tsp. dry mustard
2 Tbsp. chopped red onion
1 clove garlic
2/3 c. salad oil
2 Tbsp. Papaya Flesh
papaya seeds (slightly peppery taste)


Blend all ingredients except papaya seeds until smooth. Add papaya seeds a little at a time, until dressing looks like it contains ground pepper.
