Kansas City Style BBQ Baby Back Ribs

Kansas Style Ribs have a dry rub initially then finished off with a sauce at the last few minutes of cooking on the grill.

3 racks of baby back ribs, each weighing about 2 -3 lbs.

RUB:

1 T. kosher salt
1 T.coarse ground black pepper
1 T. ground cumin
1 T. chili powder
2 T. brown sugar


Combine all ingredients in bowl and rub on both sides of each rack of ribs. Place ribs in foil, tightly wrapped, each rack in its own package of foil.

Place an aluminum pan (12″x15″) filled with water on low heat of barbeque and lay the three packages of ribs across the pan of water, not allowing the ribs to touch the water. Close the cover of the grill and cook the ribs for 1 1/2- 2 hours. Remove from foil, place ribs on grill, and cook for 10 minutes per side, brushing with sauce as you grill. Cut into pieces of 3-4 ribs. Serves 6-8.

BBQ Sauce:

2 T. canola oil
2 T. butter
1 medium onion, chopped
4 cloves garlic, minced
1 cup ketchup
1/2 cup honey
1/4 cup soy sauce
3 T. Worcestershire sauce
1 tsp. dry mustard
juice of 2 lemons

In a medium saucepan, heat oil and butter. Saute the onion until soft. Add the garlic, and cook another minute on low heat. Stir in ketchup, honey, soy sauce, Worcestershire sauce, dry mustard, and lemon juice. Cook for 5 minutes, until all combined. Use as directed above. (Can be made several days ahead, and then refrigerated). Makes about 2 cups sauce.
