Late Summer Dutch Oven Peach Cobbler

There is nothing more summer-y than peach cobbler!

Peach season snuck right up on us! It’s time to make use of this juicy summer fruit in the best way we know how: peach cobbler! Make it in your Dutch oven for a caramelized dessert you can serve up at home or in the great outdoors.

Chef Todd Leonard shares how to get it just right. Add in some fresh cherries and apricots for an extra dose of summer fruit. Top it all off with an easy-to-make streusel you can make on the go.

Dutch Oven Peach Cobbler

Ingredients

Peach Filling

  • 4 cups Fresh or frozen peaches — or 2 cans
  • 1 cup Frozen Cherries (optional)
  • 1/2 cup Brown sugar
  • 1/4 cup Butter
  • 1 teaspoon Vanilla extract
  • 1/4 teaspoon Cinnamon
  • 1 cup Apple Juice

Cake

  • 1 1/2 cups White flour
  • 1/3 cup White sugar
  • 3/4 teaspoon Baking powder
  • 1/4 teaspoon Salt
  • 1/2 cup Butter milk
  • 1 tablespoon Vegetable oil
  • 2 tablespoons Butter — slightly melted
  • 1 tablespoon Vanilla extract
  • 2 Eggs

Streusel

  • 1/4 cup Brown sugar
  • 1/4 cup Quick oats
  • 1/4 cup White flour
  • 1/4 cup Butter
  • 1/4 teaspoon Cinnamon

Directions

Preheat oven to 400.

For Peach filling: Bring all ingredients in a Dutch oven or sauce pan to a simmer. Let simmer for 5 minutes.

For Cake: Bring all ingredients in a bowl and whisk until smooth. Spoon batter over peach filling.

For Streusel: Bring all ingredients into a bowl and cut butter into flour until crumbly and like cornmeal. Sprinkle over cake batter.

Bake in a 12 inch Dutch oven for 25-30 minutes with about 32 coals.
