Layered Southwest Salad

1 package spring mix salad greens
2 roma tomatoes, seeded and diced
1 cucumber, peeled and diced
1 small can whole kernel corn, drained
1 red bell pepper, diced
1 cup julienned jicama
1 15-ounce can black beans, rinsed and drained
1 cup grated Mexican blend cheese
4 green onions, sliced
4 chicken breasts, grilled and diced (optional)
Spicy ranch salad dressing
Tortilla chips (optional)

Wash lettuce and pat dry with paper towels. In a large glass bowl, layer
lettuce, then tomatoes, cucumber, corn, red bell pepper, jicama, black
beans, cheese, green onions, and chicken if using. Serve with spicy
salad dressing and tortilla chips if desired.
