Lemon-Zucchini Cookies


3/4 cup soft butter
1 1/2 cups sugar
2 eggs
2 cups grated zucchini
1 cup chopped pecans
2 teaspoons lemon zest
1 teaspoon salt
2 1/2 cups all purpose flour
2 teaspoons baking soda


Preheat oven to 350 degrees. Lightly oil a cookie sheet. Combine all
ingredients and mix until they make a dough. Form dough into balls the size of
a golf ball. Bake for 8-10 minutes. Remove from oven and let stand to cool for
approximately 15 minutes.
Glaze:
1 cup powdered sugar
1/2 cup water
juice of 1/2 lemon
zest of 1/2 lemon


Mix ingredients together

After cookies have cooled, spread the glaze on top of each cookie.
