Light Old Fashioned Eggnog


3/4 cup sugar
¼ to ½ teaspoon cinnamon
¼ teaspoon fresh grated nutmeg
¼ teaspoon allspice
pinch salt
1 egg
4 whites
1 ½ cups fat free skim milk
1 ½ cups fat free half-and-half
½ teaspoon vanilla extract
½ teaspoon imitation almond – optional
fresh ground nutmeg
4 – 8 drops yellow food coloring


1. Combine sugar together with allspice, cinnamon and nutmeg in a large bowl. Add egg and egg whites to sugar and beat on high speed with an electric mixer for 5 minutes.

2. Pour one-cup skim milk into a saucepan and heat over medium, stirring constantly until steaming. Gradually stir half of the hot milk into the beaten egg and sugar mixture.

3. Stirring, pour the hot milk and egg mixture back into the remaining milk in the saucepan. Return to medium heat and cook 5 – 8 minutes, stirring constantly until mixture is steaming once again and slightly thickened so that it thinly coats the back of a spoon. Do not let mixture boil. Stir in vanilla and or almond extract and remove from heat.

4. Stirring frequently, allow mixture to cool 5 minutes before blending with remaining milk and fat free half-and-half and food coloring. Cover and refrigerate until well chilled. Serve cold eggnog sprinkled with fresh grated nutmeg.

Yield 1 quart or 4 – one cup servings each at approximately 275 calories; 1.5 grams total fat; .5 gram saturated fat; 52 milligrams cholesterol; 49 grams carbohydrate 0 dietary fiber; 9.7 grams protein; 208 milligrams sodium

Regular Eggnog contains 18 grams fat per 1-cup serving, 320 calories and 180 milligrams cholesterol

Light Eggnog contains 6 grams fat per 1-cup serving, 340 calories and 90 milligrams cholesterol
