It’s a western riff on the classic chocolate chip cookie—and you’ll love it just the same.
Elizabeth Harmer saddled up and shared her cowboy cookies! They’re moist, chewy, and the perfect way to celebrate Pioneer Day on the 24th.
These cookies are loaded with oats, chocolate chips, and pecans. To really take them to the top, go for Blue Cattle Truck vanilla. Locally owned and operated, Elizabeth says she reaches for it in all her baking.

Cowboy Cookies
Recipe from Elizabeth Harmer
INGREDIENTS
- 1 cup butter
- 1 cup brown sugar
- 1 cup white sugar
- 2 eggs
- 1 teaspoon vanilla
- 2 1/4 cups flour
- 1 tsp. baking soda
- 1/2 tsp. salt
- 1/2 tsp. baking powder
- 2 cups rolled oats
- 1 1/2 cups milk chocolate chips
- 1/2 cup chopped pecans
METHOD
- Preheat oven to 400.
- Cream sugars, butter, eggs, and vanilla until fluffy.
- Sift dry ingredients and stir in.
- Add oatmeal, chocolate chips and pecans.
- Place parchment paper on your baking sheet and place 9-12 cookie dough balls, depending on the size of your cookie sheet, 3 inches apart.
- Bake for 9 1/2 minutes and then let rest on the cookie sheet for 10 minutes.
- Move to a cooling rack and Enjoy!
