Lobster Fettuccine

1 tablespoon olive oil
1 clove garlic, crushed
½ cup tomatoes, seeded, peeled, and diced
½ cup heavy cream
pinch cayenne
½ teaspoon fresh cracked black pepper
2 cooked one-pound lobsters
2 tablespoons butter
1 tablespoon fresh basil, chopped
2 tablespoons Parmesan cheese, grated
3 cups fettuccine, cooked

Remove the tail from the lobster, cut it in half, and scoop out the lobster meat. Crack and retrieve the meat from the claws. Set the lobster meat aside.

Cook the garlic in olive oil in a sauté pan over medium-high heat for 30 seconds. Add the tomatoes and cook for one minute. Add the heavy cream, cayenne, and black pepper and cook for one minute. Add the lobster meat and cook for 30 seconds. Add the butter and basil and cook just until the butter melts. Add the hot pasta and toss. Finish with the grated Parmesan cheese.
