Lobster Pesto Pasta


Pesto Ingredients:
1 pound fresh basil
4 garlic cloves
1 cup pine nuts, toasted
¼ cup olive oil
¼ cup Parmesan cheese


Combine all of the above ingredients in a food processor until paste consistency.

Lobster Ingredients:

  • 5 medium raw shrimp, peeled and deveined
  • ¼ cup lobster meat, cooked
  • ½ cup mushrooms, sliced
  • ½ cup artichoke hearts, quartered
  • ¼ cup pesto
  • ½ cup cream
  • ½ cup white wine or water
  • 1 tablespoon pine nuts, toasted
  • 1 teaspoon olive oil
  • 1 cup pasta, your choice

    Method: Place olive oil in a sauté pan over medium high heat. Bring to temperature and add mushrooms. Sauté for one minute. Add shrimp, lobster meat, and artichoke hearts and sauté for an additional minute. Add wine and cream, reduce heat to medium, and reduce until sauce consistency. Add pasta of your choice and thoroughly combine. Heat through and serve immediately.
