3 cloves garlic
olive oil
2 whole Maine lobsters
¼ pound butter, softened
3 cloves garlic
1 teaspoon parsley, chopped
1 tablespoon Heinz 57 Sauce
½ teaspoon fresh black pepper, cracked
juice of one lemon
1 teaspoon Parmesan cheese, grated
Roast the garlic cloves in hot oil for 10 minutes, or until soft. Remove from oil and set aside.
Cook the lobsters in boiling water for 7 minutes. Remove from pot. Split the lobsters in half lengthwise and set aside.
In a bowl, mix together the butter, garlic, parsley, Heinz 57 Sauce, pepper, and lemon juice. Spoon a dollop of the butter mixture on top of each lobster tail, sprinkle with Parmesan cheese, and place under the broiler until browned.
Melt the remaining butter mixture and use as a dipping sauce.
