If you do nothing else festive for St. Patrick’s day, make this cereal treat that will make the entire family smile.
Lucky Charm Rice Krispies
1/2 lb. (1 stick) unsalted butter
10 oz. mini marshmallows
6 C. Lucky Charms cereal
Prep a 9×13 glass dish with parchment paper, or non-stick spray. Set aside. Place cereal in a large bowl. In a medium saucepan, brown butter by melting butter completely over medium heat. Watch it closely as it turns from light yellow to golden amber. This is when it can go from browned to burned within seconds, so when you start to see the foam, pay attention and toss in the marshmallows when you smell that nutty fragrance. Stir marshmallows until completely melted. Pour melted marshmallow butter mixture over the cereal and stir until everything is completely coated. Pour over the prepared glass dish. Place another piece of parchment paper on top and press down to make an even layer of krispie treats. Cover with plastic wrap or the lid, and let set for 20 minutes. Slice into squares and serve. Keep in a closed container to keep fresh and gooey.
