Macadamia Nut Crusted Opah with Citrus-Olive oil


1 egg
1 cup milk
1/2 cup all-purpose flour
1/4 cup macadamia nuts, chopped
2 tablespoons olive oil
2 6-8 ounce opah filets
salt and pepper to taste
1/4 cup olive oil
1/2 teaspoons lime zest
1/2 teaspoon lemon zest
1/2 teaspoon orange zest
juice of 1/2 lime
juice of 1/2 lemon
juice of 1/2 orange


Mix the egg and milk together in a small bowl. First, dip the filets in the egg wash, next in the macadamia nuts, and finally in the flour.

Place 2 tablespoons of olive oil in a heavy sauté pan over medium heat. Add filets and cook for 3-4 minutes per side. Season with salt and pepper to taste.

Combine the 1/4 cup of olive oil with the zest of the lime, lemon, and orange. Add the lime, lemon, and orange juices and mix together.

To serve:

Place the filets on individual serving plates and top with the Citrus-Olive Oil. Serve with white rice.
