2 8 ounce Mahi Mahi filets
½ cup shredded zucchini
½ cup shredded yellow squash
¼ cup red onion, sliced thin
¼ cup green pepper, sliced thin
½ tablespoon fresh ginger, finely chopped
2 tablespoons butter, softened
½ tablespoon soy sauce
juice of one lemon
pinch of freshly cracked black pepper
1 tablespoon fresh mint, finely chopped
Combine ginger, butter, soy sauce, lemon juice, black pepper and mint with a wire whisk. Set aside.
Place vegetables in two mounds on top of a large piece of parchment paper. Place a mahi filet on top of each and sprinkle with salt and pepper to taste. Spoon ginger butter over the top.
Fold parchment paper around filets and seal, making sure it is air tight. Bake in a 325 degree oven for 10 to 12 minutes.
